How we work with your team
Mosaic Flavors has separate R&D laboratories at both our Chino, California and Montreal, Quebec facilities. Our team includes certified flavorists, analytical chemists, and trained lab assistants. They work on custom flavor development, flavor matching, flavor masking, and reformulation projects every day.
What that means for you is straightforward. You're not waiting on a global R&D queue. When your project needs attention, it gets it. When something isn't working, we figure out why and fix it. If you need a technical conversation with one of our flavorists, we can make that happen.
What we use to develop your flavor
Good flavor development is mostly sensory work. Our flavorists evaluate, adjust, and re-evaluate until the profile is right. That said, we also have analytical tools available when the work calls for them.
Gas chromatography and mass spectrometry (GC-MS) — used for complex flavor matching projects where sensory analysis alone isn't enough. GC-MS lets us look at the chemical composition of a benchmark flavor and identify what's driving the profile. We don't use it on every project, but it's there when we need it.
Multisensory testing facility — available for sensory studies on the right projects. This is typically used by established brands with enough volume to justify a formal evaluation. Not every project needs it, but for brands that want structured sensory data, we have the capability.
In-lab triangle tests — used to evaluate whether two samples are perceptibly different. Useful during matching and reformulation work to confirm when a revision has landed.

Regulatory and Compliance
Our flavors are manufactured to meet U.S. and Canadian regulatory requirements. Both facilities maintain certifications covering kosher, organic, non-GMO, and other common label claims. If you have specific retailer or market requirements, tell us upfront and we'll build to those standards from the start.
