How Mosaic Flavors came together

Mosaic Flavors is a mid-market flavor house made up of acquisitions of OC Flavors, Novotaste, and First Coast Flavors. Mosaic Flavors has now become a top provider of high-quality, customizable flavor solutions. With locations in the U.S. and Canada, we leverage our flavorists' expertise to craft unique flavors from natural and organic ingredients.

Mosaic Flavors was formed in 2023 through the combination of three established North American flavor companies: OC Flavors, based in Chino, California; Novotaste, based in Montreal, Quebec; and First Coast Flavors, based in Jacksonville, Florida.

Each company brought something different. OC Flavors had deep roots in liquid flavor development for beverage and bakery. Novotaste brought powder expertise and strong Canadian market knowledge. First Coast Flavors added sales reach and customer relationships across the southeastern U.S.

Together they became Mosaic: a manufacturer with dual production facilities, a larger technical team, and the ability to serve food and beverage brands across the full North American market.

 The name reflects how it happened. A mosaic is made of distinct pieces that form something bigger when they come together. That's what this company is.

What we're here to do

Mosaic Flavors develops and manufactures custom liquid and powder flavors for food and beverage brands across North America. We work with product developers and R&D teams on custom flavor creation, flavor matching, flavor masking, and reformulation. 

We're not the biggest flavor house. That's by design. Mid-market manufacturers don't need a multinational with a six-week queue. They need a team that knows their product, picks up the phone, and gets samples out fast. That's what we built. 

Our two facilities in Chino, California and Montreal, Quebec give us U.S. and Canadian manufacturing capability under one company. Shorter lead times, dual-sourcing options, and regulatory coverage on both sides of the border.

How we work with customers

Every project starts with a brief. You tell us your application, your target profile, your processing conditions, and your cost parameters. We take it from there. 

You work with a dedicated contact who knows your project and can bring in our flavorists directly when you need them. Most first samples ship within two weeks. Revisions are part of the process. We don't consider a project done until you do.

For established brands with the volume to support it, we can also bring formal sensory evaluation into the development process.
